Callebaut Chocolate Academy

I've been called a lot of names in my life, but "Master Chocolatier" is not one of them ; ) Instead, I pride myself in being a very dedicated chocolate enthusiast, chocolate lover, chocolate hobbyist, chocolate cheerleader and chocolate retailer. To summarize: Chocolate is my life! Becoming a chocolatier (pronounced: CHAWK-lah-teer) requires years of formal training, usually beginning with studying pastry and confectionery arts. Building on this (tasty) foundation, a Master Chocolatier will go on to study the finer skills of transforming chocolate into art. I made the leap from "Chocolate Devourer" to "Hobby Chocolatier" when I took my first formal chocolate making class in 2002. I was immediately hooked! It was there that I discovered my two favorite smells: warm, melted chocolate and simmering whipping cream! When I bought my Red Deer store in 2011, I decided I needed to ramp up my hands-on chocolate making experience which led me to the Barry Callebaut Chocolate Academy in Chicago. Barry Callebaut has 12 Chocolate Academies located all around the globe and tout many internationally awarded Master Chocolatiers and the most cutting-edge chocolate technology. Best instructors. Best equipment. Best chocolate. And the best meals! You have to understand that for me, this place is my perfect chocolate Disneyland! The people in my classes ranged from chocolate retailers & restauranteurs to food scientists and doctors. From this broad array of experience, together we started learning the fundamentals of chocolate making: tempering, molding and enrobing and moved on to more advanced techniques as the days progressed and we grew in confidence...and became less clumsy ; ) I was so inspired by my courses in Chicago that I had to make it available in Red Deer! I base all of my chocolate parties and classes on what I learned at the Callebaut Chocolate Academy. However, my focus is on creating chocolate hobbyists with the goal of sending everyone home with a box of their own handmade chocolates and the skills to continue making their own "signature" chocolates at home. I'm happy to say our classes and parties have been hugely popular!
